RESPONSIBILITIES:
Meal Preparation and Cooking

JOB REQUIREMENTS:
● Minimum 7+ years of chef experience, preferably in Michelin-rated/fine dining establishments and private families, backed by a culinary degree or certificate.
● Proficiency in diverse cuisine styles; Asian fusion dishes are a plus.
● Flexible in work schedules, including weekends and holiday shifts.

Qualifications

* At least five (5) years of directly related restaurant cooking experience which demonstrates a working knowledge of high-volume food production, food service production, food service positions, equipment, and supervisory techniques in this field.
* A valid driver's license and an acceptable driving record for the past three (3) years to be eligible under NMS' vehicle insurance policy.
* Candidates must have the ability to instruct and train others as well as the ability to handle multiple tasks occurring at the same time.
* Must have or obtain an Alaska Food Workers Card and/or ServSafe Certification upon hire.

THE ROLE
Under the direction of the Executive Chef and Executive Sous Chef, the Chef de Cuisine will be responsible for effectively managing all culinary operations of the restaurant including the oversight of production, operation, and sanitation aspects of culinary and stewarding operations.

Job Summary
The Performance Chef, Executive Sous will improve player health and performance through the creation of nutritionally optimal meals and snacks for the players and coaches. YOU WILL:
Be responsible for the entire restaurant operation, including PnL responsibilities such as food cost management, labor efficiency, guest experience and building top-line sales.
Collaborate with the CDC on QA processes and convert guest feedback into actionable insights for the team.
Manage new initiatives and scheduled launches within the restaurant while instilling an entrepreneurial spirit in your team to keep them excited and engaged.
Monitor the operational flow of the restaurant, ensuring culinary and DOH standards/protocols are being followed and executed.
Manage all problems with technology, systems and/or offsite ordering platforms. You are proactive in troubleshooting and can handle all the moving pieces with ease.
Be the face of hospitality by both interacting with guests and delivery drivers to provide exceptional service and training up concierge roles in the restaurant to do the same.
Ensure that all employee relations conversations are properly documented and communicated to HR, including performance and GROW model conversations.

Review & collaborate on people development plans with the Field Leadership team to build thoughtful succession plans.
