Job Summary:The cook is to assist in the preparation of meals in the kitchen under the guidance and direction of the Executive Sous Chef and the management team. The person will perform routine kitchen tasks such as setting up workstations and ingredients so that food can be prepared according to recipes. To be successful in this job, you will need thorough experience with hot and cold food preparation.

Essential Duties and Responsibilities:Knowledge of various cuisines and cultural foods with an emphasis on sustainable sourcing. Communicate with team and management. Attend in-service training. Responsible for preparing and executing meals and understanding the timing of food production. Responsible for expediting and maintaining the amount of food produced based on forecasted demand during service times. Ability to cook and prepare food according to production guidelines and recipes. Knowledge of various food products from a variety of cultures and ethnicities, identification, and acceptable level of food quality. Must know methods of food preparation, cooking times, and portion sizes to ensure food is prepared in the prescribed manner. Evaluate food quality and preparedness by tasting everything. Ensure food is stored at the appropriate temperature for the appropriate length of time and follows all food safety standards set up/breaks down the kitchen. Responsible for the overall cleanliness of the kitchen, including floors, counters, walls, etc.. Maintains a clean, safe, and sanitary workstation, equipment, and utensils. Ability to safely operate all kitchen equipment (choppers, slicers, ovens, steamers, a variety of knives, etc.). Assist Chef in maintaining production records (food usage, overages, shortages, customer counts, etc.). Communicate with management regarding food product that needs to be ordered for upcoming production Report safety hazards discovered in the location to management immediately additional job functions able to provide outstanding customer service and get along with coworkers, the Riverdale community, and the management team. Ability to communicate to our guests the important information pertaining to allergens and food knowledge (culture, ethnicity, procurement).Responsible for receiving deliveries and proper storage of all items.Knowledge of diet-restricted meal components, preparation, production, and service. Perform other related duties as assigned.
Types of Machines, Tools, and Specific Equipment Used:Basic knowledge of cooking utensils and equipment, but not limited to: pots, pans, dishware, silverware, glassware, food slicing machine, knives, oven, grill/stove burners, microwave appliances, brazier, steam kettles.
Physical Demands:Ability to stand for long periods of time, bend, kneel, and reach to store/retrieve supplies. Ability to lift, carry, and push supplies and boxes up to 40 pounds.
Work Environment:Occasional environment exposures to cold, heat, and water.
Language Skills: Ability to read, interpret, and follow directions in the English Language. Ability to effectively present information and respond to questions from students and community members.

The Cook 2 will be responsible to accurately and efficiently prepare, portion, cook, and present a variety of hot and/or cold food items for various meal periods: to include breakfast, lunch, dinner and special/catered events. The Cook 2 is responsible for cooking and preparing food according to recipes and production guidelines while adhering to food safety, food handling and sanitation procedures.
Supervision:
This position reports to the Lead Sous Chef of unit and indirectly reports to the Executive Chef for their area of campus.
Job Responsibilities:
Responsible for learning and adhering to all food preparation guidelines as established by the culinary leadership team for Ithaca College Dining Services.
Prepare food independently in accordance with current applicable federal, state and cultural standards, as well as guidelines and regulations to ensure high-quality food service is provided
Ensure that the dining hall kitchen and each individual workstation is set up for every meal with all needed ingredients and equipment.
Safely utilize and operate a variety of utensils including knives & equipment such as ovens, stoves, slicers, mixers, etc.
Taste products, read menus, estimate food requirements, check production, and keep records in order to accurately plan production.
Work with operational and culinary staff to requisition product, supplies and equipment.
Clean and sanitize all work stations and equipment and follow all Ithaca College and other relevant regulatory rules and procedures.
Attend all required training sessions including allergy, foodborne illness, and safety training.
Develop and demonstrate a multicultural awareness and contribute to cultivating an inclusive, diverse and respectful Ithaca College community. Demonstrate civil and inclusive behavior when interacting with staff, faculty, students and visitors to the College. Promote a flexible, collaborative and inclusive work and living environment and engage in educational opportunities to increase awareness and understanding of diversity and inclusion.
Qualifications:
Previous experience as a chef, cook or similar position in a college/university dining hall, a restaurant or other relevant establishment and working knowledge of food preparation procedures and equipment is required. Willingness to adhere to food preparation and service standards as set by Ithaca College Dining Services staff is required. Ability to read and follow written and electronic recipes while unsupervised is required. Strong interpersonal and communication skills and the ability to provide excellent customer service while working effectively and respectfully within a diverse and inclusive environment is strongly preferred. The Cook 2 will be required to obtain food safety certification upon hire.
Work Environment:
Work of the Cook 2 is carried out within an accessible, safe, indoor and occasional outdoor environment. Long periods of walking, standing, bending and carrying moderately heavy items (up to 50 pounds) may be necessary. The Cook 2 will be issued and/or required to wear slip resistant shoes, cut gloves, and operate kitchen equipment. The Cook 2 will be required to work overtime, nights and weekends and various holidays as needed.
