Interact with residents on a daily basis to ascertain their views, suggestions and concerns on meals served at the direction of Food Service Director. Keep the kitchen clean, organized and fully stocked. Properly store, label and rotate food to maintain quality and safety standards Maintain and record proper temperature controls, food storage and food rotation. Adhere to safety and sanitary practices. Support teammates to keep the kitchen running effective and positively. Take pride in every plate that is sent out to ensure mealtime is a highlight for residents. Requirements Obtain and maintain a Washington State Food Handler's Permit. Must be dependable Able to lift 50 pounds unassisted Must be in good health and physically/mentally capable of performing assigned tasks Must possess knowledge of safe sanitation practices, safety practices and special diets Must be able to work in Bellevue, WA At least 1 year of experience working in a food service setting.     Prepares display cooking in retail service station. * Preps and prepares daily menu items. * Efficiently requisitions, inspects, prepares, cooks, cools and portions large and small quantities of meats, vegetables, cereals, soups, fruits and other forms of food in accordance with quality standards, quantity demands and standardized recipes. * Recommends recipes, menus and changes in recipes and cooking methods to improve quality of food; forecast specific quantities of menu items to be produced; maintains necessary food production records. * Forecasts production and utilizes leftovers to maintain efficient waste control program. * Keeps abreast of new trends and methods of food preparation in the food service and catering industry. * Processes food for storage and cooling following regulatory codes. * Labels and dates items as required. * Maintains organized, clean production area, equipment, utensils and tools. * Cleans work area, including but not limited to, ovens, stove, grill, and tables. * Lifts trays and pans of food from ovens, steamers, and other equipment. * Pushes food carts, racks, dollies, and cambros. * Monitors refrigerator and freezer temperatures internally and externally. * Inspects integrity of food products prior to use. * Contributes to a smooth, non-stop customer service operation providing high quality food services to ensure the needs of the customer are met. * Demonstrates appropriate sanitation and safe food handling procedures for food preparation, services, delivery and storage. * Knowledgeable and practices food safety codes and governing standards; federal, state, local, and accreditation agencies. * Uses standardized and non-standardized recipes and ingredients to prepare, create, and process foods. * Checks and records temperature of food as required. Covers, labels and dates food items and leftovers for storage. * Documents refrigerator/freezer temperatures as required. As a Cook at MercyOne, you will Under direct supervision of the Chef Coordinator, the cook functions as part of the Food Production Team to produce consistently high-quality food for patients, personnel, and visitors. Provides services for all age groups, infant to elderly. * Prepares entrees, starches, grill/fryer items, soups, salads, vegetables, texture-modified food according to menu and projected needs. Produces high quality products by adhering to standardized recipes, methods, and seasoning specifications. Ensures food is prepared at specified times. * Performs advance food preparation by checking menus for anticipated needs and preparing foods in predetermined quantities. * Uses computer as needed for food production. * Requisitions items from storeroom based on the menu and inventories and orders fresh produce. * Checks in deliveries ensuring proper quantity and quality and notifying leadership of any discrepancies. * Maintains clean equipment and work area. Follows schedules for cleaning equipment and notifies leadership of equipment operating problems. Always observes infection control practices. * Provides services in the cafeteria representing the organization in a positive and professional manner. * Measures and mixes ingredients according to approved recipes and methods using blenders, mixers, grinders, slicers, knives, etc. * Tests food being cooked to ensure doneness. Adjusts heat controls as needed. Improves flavor and texture of food by adding ingredients or seasonings. Schedule: * Variable Shifts; Rotating weekends General Requirements: * Must be at least 18 years old. * Formal or on-the-job training in institutional quantity food production preferred. * Six months experience desirable. * Ability to read, write, make simple calculations, follow oral and written directions. * Accurately weigh and measure food. * Ability to learn food preparation methods and use of institutional kitchen equipment. * Able to learn and apply principles of kitchen safety and food handling sanitation. * Effective communication skills. * Basic computer skills. Education: * High school diploma or GED preferred, or minimum of 3 years of relevant work experience.
