The Role and Responsibilities Communicate kitchen GMP rules to Chefs as needed- gloves, hairnets, proper hand washing, cleaning of equipment, sanitizing of prep stations, etc. Record and maintain daily cooking cooling logs, review, and report deviations for corrective actions with the FS team Maintain training roster for employees and chef teams including Food Handler certifications Perform daily and monthly audits/assessments on chef teams GMP and the manufacturing kitchen's compliance Ensure all items in coolers and freezers are appropriately labeled including Chef Name, Product Name and Date etc. Ensure all walk-in coolers and standalone fridges maintain specified temperature settings Daily facility compliance walks including corrective actions Ensures the facility is always ready for inspection by a local regulator or third-party auditor. Monitor facility for compliance with safe chemical use and any evidence of pest harborage. Perform weekly thermometer calibrations for Chefs and Food Safety team.
