SUMMARY OF POSITION
Prepares menu items according to company policies, procedures, programs and performance standards. Responsible for helping to maintain food costs and maintain cleanliness of the kitchen at all times. Performs all duties to maximize guest satisfaction and quality of work environment as directed by Kitchen Manager or Manager on Duty.
POSITION ACTIVITIES AND TASKS
Prepares Cooking Items
Reports to work well-groomed, in clean and proper uniform and at all times practices good person hygiene.
Uses, maintains and cleans all kitchen equipment, plus preparation and storage areas.
Stocks and rotates products on line to ensure they are within shelf life standards.
Has sufficient knowledge of recipes, menu items and prep procedures to ensure correct portioning, quality, cooking time and performance standards.
Prepares prep items according to guest request within company standards and following food safety and sanitation procedures.
Controls Food Cost
Ensures products are accurately portioned and ensures food products are prepared as specified by recipes.
Utilizes FIFO (first in first out) standards when preparing items.
Maintains Cleanliness
Maintains cleanliness of the kitchen, prep areas, coolers and storage areas
Follows proper safety procedures and policies concerning food handling, rotation and storage
Conducts line sweeps throughout the shift
“Clean as you go” throughout the shift
Understands OSHA requirements and health department standards
Cleans all equipment on line and other areas as directed by the Kitchen manager or Manager on duty.
Anticipates, identifies and corrects system breakdowns to achieve maximum guest satisfaction.
Communicates with Manager on Duty and coworkers regarding product/service deficiencies, equipment, safety problems. Etc.
Keeps General Manager and Manager on Duty informed of problems and/or issues and proposes alternative solutions for consideration.
Assists Team Members
Preps items according to recipes and procedures
Assists dishwasher with washing and restocking dishes, pots, pans and utensils
Assist front of house staff with cleanliness of dining room
Provides guest service by communicating and cooperating with the front of house staff.

The line cook is responsible for preparing, cooking, and presenting high quality food with precision and speed in all Granby Ranch establishments.
ESSENTIAL JOB FUNCTIONS:
Maintain an organized, clean, efficient workspace and maintain sanitization throughout the day in accordance with company policy and protocol.
Prepare, cook and plate food and meals.
Maintain professional and accurate preparation and presentation of all food inventories.
Ensure inventory is secure, appropriately stocked, and handled property.
Observe proper cleaning procedures and maintain an impeccably clean and orderly restaurant.
Maintain a clean and orderly service, cooking and storage area.
Maintain quality and portion control of all menu items.
Provide food to guests in a timely, professional and friendly manner.
Comply with all Colorado State Health Codes.
Adhere to all safety requirements.
ADDITIONAL DUTIES AND RESPONSIBILITIES:
Act as a positive, professional role model, adhering to the company's hospitality standards.
Maintain an exceptional level of guest service in all interaction with guests, fellow employees, and management.
Assist and support other departments for races, events and operations on high volume days.
Maintain accurate accounting and stocking of food inventories.

Requirements

Knowledge of food recipes including portion controls.
Some knife skills, and knowledge of basic cuts.
Knowledge of basic culinary techniques including stocks and soups, meat and seafood processing, baking and desserts, vinaigrettes and emulsions.
Knowledge of all proper food handling procedures, including proper labeling, rotation and storage of all food, sanitation, heating and cooling of sauces, soups and stocks.
Exceptional customer service and communications skills and maintains a friendly, professional and helpful attitude to all guests and fellow employees.

PHYSICAL REQUIREMENTS AND WORKING CONDITIONS:
Primarily indoor work in a fast paced, high pressure environment.
Some outdoor work to service the patio with outdoor grill in a mountain environment with variable weather conditions.
Must be able to lift up to 30lbs.
Dexterity for utilizing kitchen equipment.

Ability to work at a high pace with a variety of kitchen equipment

Must have current Food Handler and Allergy training certificate, or must attend Food Handler and Aller-train certification courses for Alterra Mountain company within 14 days of employment

POSITION SUMMARY:
Looking to grow your culinary skills in a fast-paced mountain kitchen? Winter Park Resort is hiring cooks of all skill levels to join our growing culinary team. With multiple food & beverage outlets across the resort, opportunities range from entry-level Cook 1 to advanced Cook 4 positions. You'll work across all stations, including grill, fryer, saut, and expo. Banquet and pastry experience is a plus. The base hourly pay range below represents the low and high end of Winter Park Resort's hourly pay for this position. ESSENTIAL DUTIES

Duties include but are not limited to:
Prepares various foods, under supervision, for restaurant and banquets.
Assist in maintaining appropriate quality and production.
Maintain high pace while cooking/prepping for a high-volume restaurant and other functions.
Participates in cost control and ongoing sanitation practices.
Set work area according to station guide
Knife skills appropriate for cook level
Will label, date, rotate product and keep a clean station. Properly store food in correct and allotted areas.
Complete Food Handler and Allergen training. Ensure compliance with established health and safety procedures.
Report all observations of damaged/ dangerous equipment.
Conduct and record time and temps at station. Has awareness of storage areas, labeling and dating.
Takes direction from Chefs, Sous Chefs, and outlet managers.
Organize station to create greatest efficiency and keep work area and kitchen organized and clean at all times, adhering to all state and local sanitary requirements.
Assist Sous Chef and Chef with securing/storing food deliveries with knowledge of food hierarchy placement.
Support with communication/notification regarding product outages. 86'd items, product shortages, low inventory items.
