Job Responsibilities
Prepare quality food and baked goods according to a planned menu
Prepare a daily report that verifies transactions

Scrub and polish counters, clean and sanitize steam tables, and other equipment
Follow established procedures and standards for cleanliness, to ensure a balanced and safe environment; duties include sweeping, moping, ware washing
Maintain garbage collection site and kitchen floor areas in a neat and sanitary fashion
Perform other duties as assigned including other areas in the kitchen
This role may have physical demands including, but not limited to, lifting, bending, pushing, pulling and/or extended walking and standing. This role may also require uniforms and/or usage of Personal Protective Equipment (PPE).

Each member of the JTDC staff is actively encouraged and supported in pursuit of creative participation, personal well-being, and professional development.
As the largest juvenile detention center in the nation, the facility contains five major departments and various offices consisting of 600+ employees who serve an average daily population of 280+ residents.
Job Summary
The FoodServiceWorker is responsible for tasks associated with the preparation and delivery of food to residents and staff in a safe, efficient, sanitary manner consistent with procedures regarding proper food handling, sanitation, safety, and cleaning schedules. The high-volume kitchen operation prepares breakfast, lunch, and dinner for residents and serves between 1000 - 1200 meals daily.
Typical Duties
Reviews daily menus and meal counts, ensures necessary food items are stocked and fresh, and prepares food items for use as appropriate (washing, peeling, chopping/dicing, seeding, etc.).
Follows standard recipes and uses various ingredients and seasonings to prepare cold items including salads, sandwiches, desserts, and beverages.
Utilizes various kitchen utensils, appliances, and heavy equipment infood preparation (knives, peelers, dicers, slicers, mixers, etc.).
Packs lunches for residents and staff in courtrooms.
Assists the Cooks when needed.
Loads and transports food carts to and from the designated floor units and school area.
During holidays or special occasions, may be asked to set up special events, caterings and may even have to help serve.
Follows proper kitchen standards when cleaning/sanitizing the work area (floors, food carts, tables, kitchen utensils and equipment, dishes, and tableware, etc.).
Maintains sanitation, health, and safety standards in work areas.
Completes production logs to track specific information for each meal.
Assists in maintaining proper inventory levels.
Performs other duties as assigned.

Menus shall be available for review. If substitutions are made for any food item, menus shall be corrected to reflect meals as served. Responsibilities
RESPONSIBILITIES:
Food Preparation and Serving:
Facilitating the set-up and clean-up of snacks and meals for children at the center ● Varied cleaning activities throughout the day ● All meals are prepared onsite ● Conducts and oversees the preparation of foodsin accordance with the Illinois FoodService Industry ● Helps to maintain established standards of sanitation, safety and food preparation and storage as set by the local and state health departments ● Helps deliver food from the kitchen to the classrooms ready to be served as suitable for the children's age and development
Disposal and Food Storage:
Storing food and supplies in appropriate areas; food closet, cabinets ● Store and wrap any leftover foodin designated containers for potential supplementing needs during the week. ● Dispose of any leftover food that is not used within 2 days.
Cleaning:
Make sure the school entrance is Tour Ready; sweep or vacuum floors/mats to remove debris on a daily basis or as needed ● Washing dishes ● Cleaning refrigerators, serving utensils, bins, cupboards and other kitchen equipment and utensils ● Sweeping and mopping kitchen floors when needed ● Clean kitchen and dining areas thoroughly, including sanitizing equipment and furniture ● Refill chemical spray bottles for kitchen, bathrooms, and classrooms.
Classroom Duties:
Cleaning classroom doors and entrance windows and handles at least 1x per day ● Collecting leftover food and supplies after meals and snacks ● Stock Kitchen and Classrooms with paper goods and supplies * Assisting teachers with breaks * Assist in the classroom when needed

Position Summary: The FoodService Assistant II will partner with the foodservice team in preparing and delivering balanced meals to Academy residents while following food and safety guidelines. This individual will provide oversight and occasional direction to the FoodService Staff while performing food receiving, inventory and maintenance and contributing to a safe and compliant foodservice environment.
Primary responsibilities:
* FoodService Training, Development & Oversight
* Assists in training and guiding new foodservice staff and providing oversight to youth employees in the FoodService Department.
* Collaborate with coworkers and exhibit and promote cooperation and flexibly with team members.
* Understands and adheres to reimbursable -vs- non-reimbursable food requirements and performs role according to these procedures.
* Participates in the interviewing, selection and hiring process for the FoodService Team and employee separation as needed.
* Assists FoodService Supervisor with scheduling and approving timecards.
* Prepares for, documents, and delivers individual FoodService Staff regular performance feedback, including positive feedback, opportunities, incidents, and corrective action.
2. Perform FoodService Functions according to Health & Safety Standards, Policy & Procedures.
* Prepares and serves food, beverage and snacks for daily resident meals and Academy Events.
* Maintains healthy and compliant sanitation areas relating to food preparation, storage, and service.
* Washes, maintains, and stores dishes, utensils, cooking and baking equipment, supplies etc.
* Ensures proper disposal food disposal and garbage processing.
* Provides support in areas of inventory, receiving, stocking and maintenance.
3. Food and Beverage Planning.
* Assists with daily meal menu planning in compliance with all nutritional and regulatory standards and requirements.
* Occasionally partners and collaborates with supervisor and FoodService department staff in additional foodservice preparation, serving, cleanup and maintenance.
* Assists in coordinating menus or food and beverage items for special events, meetings or other gatherings sponsored by the Academy.
4. Maintains accurate mealtime records, meal counts and food usage.
5. Remain current and adhere to all foodservice standard operating procedure, rules and instructions.
* Maintains appropriate confidentiality relating to resident background and treatment; complies with all Nexus privacy and confidentiality policies and maintain appropriate boundaries with residents at all times.
* Attends staff meetings and training sessions required by Nexus; understands and supports the Nexus philosophy, mission, and treatment modalities.
6. Performs other responsibilities, tasks & projects as needed.
Requirements
Required Education and Licensure:
* High School diploma or GED.
* Certificate infood handling.
* Valid driver's license required. Must meet state regulating agency and Home Office driving requirements
