Responsibilities:

Understand cost terms & components including FOB, CIF, duty and freight, ensuring accuracy and alignment with company margin targets and brand pricing strategies.
Serve as the key liaison between the SVP of Production & Sourcing, Production teams, sales department and external vendors.
Maintain proactive communication with internal teams& vendors regarding costing due date & updates.
Build, manage and optimize Excel templates, spreadsheets and formulas for large datasets.
Support the cost management process, bringing a strong understanding of material and garment construction.
Utilize SAP and Excel to manage and track costing data.
Qualifications:
3-5 years of experience in Production, Sourcing or Product Development with a strong focus on costing.
Knowledge of costing terms, components and apparel manufacturing process.
Advanced Excel Skills, including the ability to handle large datasets and create complex formulas.
SAP Experience preferred.

Annual salary starting at $90,000.

Education and/or Experience
Education
Degree in Food Science, Meat Science, Culinary Arts, or a related field. Master's degree preferred.
Certifications such as HACCP (Hazard Analysis Critical Control Point), and other food safety and quality control programs.
Technical Knowledge
In-depth understanding of meat properties, including muscle structure, fat content, and moisture levels.
Knowledge of microbiology, specifically the microorganisms involved in fermentation and curing (e.g., lactic acid bacteria, molds).
Familiarity with the chemistry of curing, including the role of salt, nitrites/nitrates, and pH changes.
Practical Experience
Understanding of traditional and modern curing methods and techniques.
Hands-on experience in producing dry-cured salami, including meat selection, grinding, seasoning, stuffing, and fermentation.
Experience with the drying and aging process to achieve the desired texture and flavor.
Experience in quality control and troubleshooting common issues in salami production.
Minimum 5 years' experience

Sensory analysis skills to assess the quality and flavor profile of cured salami.
Strong attention to detail for ensuring consistency and quality.
Problem-solving skills for addressing issues in the curing process.

This position involves food preparation, cooking, packaging, and operating within a fast-paced mobile kitchen environment. The ideal candidate has prior kitchen experience, strong teamwork skills, and is eager to learn proprietary recipes and cooking techniques. This role also requires driving and operating a 24-foot food truck, so a valid drivers license and clean driving record are essential.
Key Responsibilities:
Set up and break down workstations and cooking equipment
Prepare ingredients, including chopping vegetables and cutting meat
Learn and prepare 12 proprietary sauces (training provided)
Operate pasta maker (training provided)
Cook food items according to recipes and quality standards
Stir, turn, and monitor sauces and dishes while cooking
Package individual food orders neatly and accurately
Maintain a clean, sanitary, and organized kitchen environment
Store food and supplies properly and in compliance with safety standards
Check ingredient quality and freshness
Monitor stock levels and report shortages
Requirements:
Proven experience as a cook or in a kitchen environment
