The Commissary Kitchen Manager is directly responsible for the hands‐on leadership and successful operation of the food production within their assigned location(s). The position is responsible for the various tasks involved in the overall operation of the kitchen and management of the company's/brand's culinary program, including management of the staff, food quality/presentation, menu development, measuring business trends and maximizing sales/profitability by developing staff and by controlling expenses, shortages and all aspects of inventory control, including but not limited to purchasing and receiving of product. Key Responsibilities:
• Understands the guest is our #1 priority; Ensures that each guest receives outstanding guest service by providing a guest‐friendly environment, maintaining outstanding standards, solid product knowledge and all other components of guest service at one or multiple restaurants, to include fast food and/or full service operations
• Recruits, hires, trains, develops, creates succession plans, and communicates with all kitchen staff as well as assesses their performance on a regular basis, including offering suggestions for increased productivity and completing annual performance reviews per company program
• Responsible for independently assigning daily goals, tasks, and assignments to team members, ensuring completion through daily follow‐up, creating schedules and making adjustments when necessary, and making employment disciplinary decisions
• Implements and maintains SSP and/or brand partner guest service standards
Required Education/Knowledge:
• Associate or Bachelor's degree in Culinary with minimum five (5) years of experience in Food/Beverage operations or related industry and/or equivalent combination of education and experience
• Production kitchen management experience preferred
• Demonstrates an understanding of operating a food and beverage business

What You Will Bring

As the Kitchen Manager of our brunchery, you will oversee all aspects in the daily running of the Kitchen. You will effectively coach, train and develop your Squad members and create a positive, collaborative work environment. Assisting with stocking and setting up the kitchen stations
Washing, chopping, and quality assurance of vegetable prep.
Demonstrate skill with measuring quantities of seasonings and other cooking ingredients
Following prep recipes and adhering to all aspects of our recipes.
Portioning ingredients according to approved standards.
Keeping track of ingredient inventory and prep cycle and collaborating with other kitchen and management staff to prep or order.
Cleaning dishes, washing cooking utensils and cookware taking out the trash, and sanitizing the kitchen.
Washing/cleaning/re-stocking the kitchen and cooking utensils and storing equipment at the end of shifts.
Labeling and stocking all ingredients on designated shelves/storage areas.
Ensuring that the kitchen operation procedures and hygiene meet food safety standards and regulations
Qualifications:
1-2 years experience minimum in a high-volume bar/restaurant setting.
Computer skills, we will train on our business management systems.

Purpose Statement
The job of Nutrition & Wellness-Central Kitchen Manager is done for the purpose/s of providing support to the food service activities at assigned location with specific responsibilities for directing food service personnel; producing food to meet the mandated nutritional needs of students; ensuring proper transport and availability of food service items to a variety of sites; providing written support to convey information; and complying with mandated health standards and the National School Lunch and Breakfast Programs.
This job reports to Director of Nutrition & Wellness
Essential Functions
Monitors, cleans, and maintains all areas of the storage, food preparation and serving areas of the kitchen (e.g. utensils, equipment, refrigerators) for the purpose of maintaining safe and sanitary conditions.
Monitors satellite kitchens for the purpose of ensuring a safe and sanitary working environment.
Estimates amounts for production, prepares breakfast and lunch meals and adjusts recipes if required for the purpose of meeting projected meal requirements while meeting mandated nutritional requirements and minimizing waste of food items.
Inspects food and supply deliveries for the purpose of verifying quantity, quality and specifications of orders and/or complying with mandated health requirements.
Inventories food and supplies at central kitchen and satellite locations for the purpose of ensuring availability of items required for meeting projected menu requirements while maintaining low levels of inventory.
Manages daily site operations for the purpose of providing safe and efficient food services at the assigned site in compliance with mandated nutritional menu requirements and health standards.
Supervises kitchen staff and satellite kitchen staff (e.g. orients, trains, evaluates) for the purpose of maximizing the productivity of the work force, providing adequate coverage and ensuring compliance with health, safety, and nutritional standards in the operations. This will also include supervision of Nutrition & Wellness workers I, II and III, student workers, interns and other personnel as assigned.
Supports assigned personnel, student workers, and/or volunteers for the purpose of assisting them in resolving problems and performing their functions in a safe and efficient manner.
Participates in department meetings, in-service trainings, workshops, etc. for the purpose of conveying and/or gathering information required to perform job functions.
Performs functions of other nutritional services positions, as needed within site and at satellite sites for the purpose of ensuring adequate staff coverage within site operations.
Prepares a variety of documentation (e.g. sales transactions, inventories, production records, etc) for the purpose of providing written support, compliance, and/or conveying information.
Processes daily transaction data (e.g. sales transactions, end of day reports, etc) for the purpose of documenting and maintaining accurate account records, balances and transactions mandated by the Department of Education.
Other Functions
Performs other related duties as assigned for the purpose of ensuring the efficient and effective functioning of the work unit.

Work Environment
The usual and customary methods of performing the job's functions require the following physical demands: significant lifting, carrying, pushing, and/or pulling, some climbing and balancing, frequent stooping, kneeling, crouching, and/or crawling and significant fine finger dexterity. Generally the job requires 20% sitting, 30% walking, and 50% standing. The job is performed under temperature extremes and under conditions with exposure to risk of injury and/or illness. Applicant must have ability to lift 50 pounds.
