Culinary Internship Program
Kalahari Resorts & Conventions is seeking a Culinary Internship Program. This track offers on-the-job training, mentoring relationships with regular coaching, and an opportunity to connect and build life-long relationships with culinary leaders and peers. There are a select number of spots available in this program. This internship is front-line work, mixed with learning various supervisory roles. This experience does rotate between different areas/kitchens, but you may be asked to help in other areas as business volumes vary. If you're interested in learning systems, working in multiple concepts, scratch cooking and finding out how Kalahari feeds the masses - down to an intimate dinner - this is for you! Previous cooking experience is necessary.
Culinary Art Focus
All Kalahari properties have multiple concepts, from coffee and scratch-pastry shops, sit-down restaurants, a beverage operation, to a full-service convention center. As a Culinary Intern you will gain the unforgettable experience of being part of our back-of-the-house teams in either: Double Cut Steak House, Sortino's, Cinco Niño's, B-Lux Bar & Grill, Cinco Nino's, waterpark eateries, banquets, baking/pastry, and the production kitchen.
Baking & Pastry Arts Focus
All Kalahari properties have a from-scratch production bake shop. Baking and Pastry Arts Program will rotate through a variety of roles, including bulk recipe batching, bread production, pastry/cakes, displays/plating.
Payrate: $18.00/hr.
What We're Looking For
One or more of these criteria must apply to be eligible:
A student enrolled at the Culinary Institute of America in a Culinary or Pastry Arts Program. (Kalahari is a Certified Externship Site for CIA externs)
A student enrolled in a culinary or pastry arts program at a community college or university.
No formal schooling but has at least one year of experience in a commercial kitchen or restaurant. Someone seeking hands-on work experience and gaining invaluable industry knowledge
Kalahari's Culinary Intern program is typically a minimum of 12 weeks but can be customized according to curriculum requirements.

Job Summary

Essential Duties and Responsibilities
Includes the following:
Ordering, receiving and preparing food items.
Maintaining food costs and budget goals.
Produce required product according to Banquet Event Orders for each event.
Maintains an active role in local hospitality community and professional associations.
Attend in-house event-related meetings and relays immediate changes with other departments.
Maintaining all kitchen equipment cleanliness and annual maintenance.
Training of all kitchen and stewarding staff to in clued “Serve-safe” and any health department regulations.
Maintain a Health Department score of 90 or higher.
Inventory controls.
Responsible for Kitchen in absence of Executive Chef.
Assists with monthly inventory.
Training of all cooks.
Other duties as assigned.

Supervises all kitchen and stewarding staff

A SOUS CHEF'S DAY-TO-DAY
Adhere to the company's mandated F&B menu and purchasing programs
Maintain budgeted revenue, costs of sales, labor, supplies, as well as operating cash flow as it relates to food operations; review monthly profit & loss statements and make adjustments as necessary
Work with the Operations team and Sales staff in the absence of the KM/Chef, plan, supervise, and execute all banquet functions in conjunction with the operations and sales staff including supervision of the preparation and service of food and refreshments, as well as clean-up.
Estimate food consumption and make purchases as appropriate from our specified food program; schedule staff efficiently to accommodate shifts in business volume
Partner with KM/Chef or General Manager to address and resolve disciplinary issues as appropriate. Foster a team work environment.
Ensure that our product quality, freshness, and presentation are always at company standard; supervise and oversee the preparation, portioning, garnishing, and storage of all food
Assist Chef with managing all kitchen equipment maintenance as well as local Department of Health (DOH) regulations by conducting sanitation audits
Proactively ensures that a clean, safe environment is maintained at all times.
Report critical issues to General Manager ASAP.
WHAT IT TAKES
Minimum of 1- 3 years of kitchen supervisory experience in high-volume retail, entertainment, hospitality, or restaurant venue is required
Experience preparing catered events and presenting foods for special events desirable
Relevant experience or equivalent combination of education and experience is also acceptable.
Current ServSafe certification required.

Job Description
Salary: $21.00 - $23.50 per hour, based on experience

The responsibilities for this role include:
Hires and trains Line Cooks and Dishwashers, under general direction of the Director of F&B
Places food and supply orders
Completes and documents safety audits and monthly in-service trainings
Ensures correct plate presentation prior to dishes leaving the kitchen
Oversees kitchen labor and food cost; monitors budget
Prepares high quality food
Qualifications
To be successful in this position, we believe that you need the following experiences, strengths, and skills:
High School diploma or equivalent is required, college or culinary training is preferred
Previous leadership experience is preferred
Must hold a Managers Food Handlers permit. This may be facilitated by Spectrum Retirement.
Experience in an office environment, answering phones or customer service preferred.
Must be self-motivated, organized, and professional. Must be able to work independently and handle multiple tasks at one time.
Strong communication skills are critical. You will need to be able to work with potential residents, current residents, family members, and team members.

Job Summary
Summary: Helps Executive Chef prepare and cook foods. Coordinates activities of cooks and other food-service associates. Assumes responsibility for kitchen and food-service associates in the absence of Executive Chef.
Essential Duties and Responsibilities:
Cooks and prepares food following approved recipes and production standards. Ensures all deadlines are met based on production orders.
Supervises hourly food service associates. Includes interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action, as appropriate.
Stores food in designated areas following all corporate, state and federal food safety and sanitation procedures.
Ensures proper food handling, presentation, portion control and maintenance of appropriate serving temperatures.
Maintains sanitation of equipment, supplies and utensils. Cleans workstation thoroughly before leaving area. Keeps display equipment clean and free of debris during meal service to comply with all sanitation, safety, production and merchandising requirements.
Interacts with customers to resolve complaints in a friendly, service-oriented manner. Relays relevant information directly to supervisor.
Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers.
Keeps up with peak production and service hours.
Monitors inventory and deliveries of product and supplies. Tracks product production, consumption and waste. Informs supervisor when supplies or product are low.
Performs other duties as assigned.
