The Jail Kitchen Supervisor is responsible for on-site supervision of operations in the Smith County Jail for all inmate food preparations. Prior food preparation experience required. The facility is operated 24 hours a day, therefore, shift assignments are scheduled as 12-hour shifts. Due to the unpredictable and critical nature of the work, the Detention Officer must be willing and available to work additional hours beyond assigned shifts, sometimes with little or no notice.
* Oversees all inmates and on-site supervision of food preparation.
* Ensures that appropriate quantities of food are ordered, prepared and served properly.
* Meets time constraints set by menu requirements established by the Texas Commission on Jail Standards.
* Ensures all inmates are supervised and servings are the correct portions, according to the approved dietitian menu.

Supervisory Responsibilities
The Jail Kitchen Supervisor would be in charge of all inmates and onsite supervision of food preparation.

Licenses and Certifications
* Certified Food Manager (CFM) must be obtained within 2 weeks of employment.
* Texas Commission on Law Enforcement (TCOLE) Jailer license before completion of one year of employment.

* Prolonged standing, frequent kneeling/squatting, bending/stooping, pushing/pulling and twisting.
* Continual walking, grasping/squeezing, wrist flexion/extension and reaching/overhead reaching.

* Commercial kitchen environment with exposure to extreme hot and cold temperatures, extreme humidity, noise, vibrations, microwaves, biological hazards (bacteria, mold, fungi), chemical hazards (fumes, vapors, gasses) and electrical hazards.
* Works with hands in water, around machinery with moving parts and slippery surfaces.
* Works with frequent interruptions. Must maintain emotional control under stress.

Restaurant Store Manager Responsibilities:
The Store Manager works as a counterpart to the General Manager. The ideal candidate for this position has a college degree (Hospitality, Food Service Management, or a related field) or high school diploma with applicable experience of three years of lead management experience in a hospitality, food service, or customer service position. Fluent English speaking and written communication skills, necessary knowledge of the use of computer applications and software such as Google, and Microsoft, professional appearance, and behavior are required for this position.
This is a 50-55 hour a week scheduled full-time position that will be employee benefits eligible after one month of hire. There will be frequent bending/ lifting, up to 30 pounds. The position works on their feet, taking very limited amounts of breaks. The position must be effective at communicating verbally, written and must be able to read the English language for the safety of those on staff and our customers. There is no way to prevent anyone who works in a Dairy Queen restaurant from coming into contact with certain food allergens. If you are have a contact allergen to any nut, eggs, milk, soy, wheat, MSG or food coloring it may be best to not apply. Essential Functions:
* Ensures dining, service, and food preparation areas and equipment are maintained in a clean and sanitary manner; ensures compliance with sanitation, safety, and health regulations.

* Instructs employees and offenders on safety rules and regulations, proper use of soaps and chemicals; sanitary procedures, food preparation and portion control, the operation of food service equipment; advises on food requirements and recipes; and calculates monthly, quarterly, semi-annual, and annual food requirements; and prepares and approves requisitions for food items, supplies, and equipment.
* Ensures adequate controls are maintained over food preparation quantities and portion sizes; prepares menus for special diet requirements of offenders; and reviews cooks' worksheets for accuracy.
* Maintains an accurate and complete count of all required kitchen tools by providing a count of all control items at the beginning and end of each shift.
* Plans, assigns, and supervises the work of employees and offenders; reviews employee and offender work schedules for adequate coverage; and establishes and administers orientation and departmental in-service training programs for food service staff and offenders.
* Ensure counts are preformed accurately for all offenders assigned to food service.
Education and Experience Requirements:
Graduation from an accredited senior high school or equivalent or GED. One (1) year full-time, wage-earning correctional, commercial, or institutional food preparation or food service management experience. ---OR--- Eighteen (18) months full-time, wage-earning correctional custody or law enforcement experience. Must possess or be able to obtain current valid SERV Safe Food Safety certification within twelve (12) months of employment date. Must maintain SERV Safe Food Safety certification for continued employment in this position. Valid driver's license with an acceptable driving record required, unless waived by management.
Post Hire Requirements:
Must successfully complete annual in-service training requirements and pass an annual background check, both of which must be approved by TDCJ.

Serving meals.
